Nonna Gina’s Meatballs
No need to wist; thanks to the handiwork of a Nonna and an Oma, this lost fare may be re-created with ease.
Ingredients
500 g pork mince
Parsley (handful and chopped)
4 slices stale bread (soaked in water, then squeezed dry)
2 cloves garlic
Pepper/salt to taste
5-6 tbsp Parmesan cheese, or Pecorino Romano
1 large egg
Olive oil for frying
Method
Mix all ingredients, roll into walnut sized balls and fry in olive oil until golden brown. They are delicious. Serve hot or cold. And eat in loving memory of Gina Ursino: Vino’s sister’s, husband’s mother.
